Ok. So, one of the first books I vividly remember reading was 'Angelina Ballerina'. Now, I don't exactly remember the plot but what has really stayed with me was a recipe it contained for Angelina's favourite cheddar cheese pies.
This book was full of little gems, I seem to remember a paper tiara, some plastic jewellery and a length of pink ribbon, but it was the cheddar cheese pies that made it my favourite...
They are so ridiculously easy to make and actually really delicious, so here's the recipe if anyone is interested:
Cheddar Cheese Pies 1/2 Litre Milk 90g Fresh Breadcrumbs 225g Cheddar Cheese, grated 4 Eggs 1 tsp French Mustard Salt and Pepper, to taste 12 Muffin Tins 1. Bring the milk to a boil in a saucepan.
2. Place the breadcrumbs in a bowl and carefully add the hot milk. Then mix in the cheese.
3. In another bowl, lightly beat the eggs.
4. Add them to the milk and breadcrumbs and stir in the mustard. Season with salt and pepper.
5. Butter the muffin tins and pour in the batter.
6. Bake in the oven for 25-30 minutes, until lightly set and golden.
